Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 1 medium carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 2 garlic cloves, minced
  • 28 ounces canned whole peeled tomatoes (with juice)
  • 3 cups chicken or vegetable stock
  • 1 tablespoon granulated sugar
  • 1 cup heavy cream
  • 0 to taste salt
  • 0 to taste ground black pepper
  • 0 optional fresh basil leaves for garnish

Directions

Step 1

In a large pot, melt the butter over medium heat until it starts to bubble.

Step 2

Add the chopped onion, carrot, and celery to the pot. Cook for 6-8 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Add the minced garlic and cook for 1 minute, stirring frequently, until fragrant.

Step 4

Pour the canned tomatoes (with their juice), chicken or vegetable stock, and sugar into the pot. Stir well to combine.

Step 5

Increase the heat to bring the mixture to a gentle boil. Then, reduce the heat to low and let it simmer uncovered for 20 minutes to allow the flavors to meld.

Step 6

Use an immersion blender to puree the soup until smooth, or carefully transfer the soup to a blender in batches and blend until creamy.

Step 7

Return the soup to the pot (if using a blender) and stir in the heavy cream. Heat gently over low heat, being careful not to let it boil.

Step 8

Season with salt and ground black pepper to taste.

Step 9

Ladle the soup into bowls and garnish with fresh basil leaves if desired. Serve warm and enjoy!
