Ingredients

  • 450 grams Elbow macaroni
  • 60 grams Unsalted butter
  • 40 grams All-purpose flour
  • 700 milliliters Whole milk
  • 250 milliliters Heavy cream
  • 300 grams Sharp cheddar cheese, shredded
  • 150 grams Gruyere cheese, shredded
  • 50 grams Parmesan cheese, grated
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Paprika
  • 120 grams Panko bread crumbs
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 180°C (350°F). Lightly grease a large baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1–2 minutes, stirring constantly, to form a roux.

Step 4

Gradually add the milk and cream to the roux, whisking constantly to avoid lumps. Cook for 5–7 minutes, or until the mixture thickens.

Step 5

Reduce the heat to low and stir in the cheddar, Gruyere, and Parmesan cheeses. Continue stirring until the cheese is fully melted and the sauce is smooth.

Step 6

Mix in the Dijon mustard, salt, black pepper, and paprika. Taste and adjust seasonings, if necessary.

Step 7

Combine the cooked macaroni with the cheese sauce, stirring until all the pasta is evenly coated. Pour the mixture into the prepared baking dish.

Step 8

In a small bowl, toss the panko bread crumbs with olive oil until evenly coated. Sprinkle the bread crumbs over the macaroni and cheese.

Step 9

Bake in the preheated oven for 20–25 minutes, or until the top is golden brown and bubbling.

Step 10

Remove from the oven and let it rest for 5 minutes before serving. Enjoy Grandma’s delicious macaroni cheese with family and friends!
