Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 0.25 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 0.5 cup parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 tsp mustard powder
  • 1 tsp paprika (optional, for garnish)
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil or melted butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.

Step 2

Cook the elbow macaroni in a large pot of salted boiling water according to the package instructions, about 7-8 minutes. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly for about 1 minute, until the mixture turns a light golden color.

Step 4

Gradually pour in the milk and cream, whisking as you go to avoid lumps. Cook the mixture, stirring frequently, until it thickens slightly, about 5 minutes.

Step 5

Reduce the heat to low and slowly stir in the shredded cheddar cheese, Gruyère cheese, and parmesan cheese. Add the salt, pepper, and mustard powder. Stir until the cheese is fully melted and the sauce is smooth.

Step 6

Remove the saucepan from heat and combine the cheese sauce with the cooked macaroni in a large mixing bowl. Mix well to ensure all the pasta is coated evenly.

Step 7

Pour the macaroni and cheese into the prepared baking dish, spreading it out evenly.

Step 8

In a small bowl, mix the panko breadcrumbs with olive oil or melted butter until evenly coated. Sprinkle the breadcrumbs over the top of the macaroni and cheese.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Step 10

Remove the dish from the oven and let it rest for 5 minutes before serving. Optionally, garnish with a sprinkle of paprika for added color and flavor.
