In a large mixing bowl, combine the all-purpose flour, cold unsalted butter, and softened cream cheese. Using a pastry cutter or your hands, blend the ingredients until the mixture forms a soft dough.
Add the vanilla extract to the dough and knead gently to combine. Do not overwork the dough.
Divide the dough into two equal portions, shape them into discs, and wrap each disc in plastic wrap. Refrigerate for at least 2 hours or until firm.
Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper to prepare for baking.
On a lightly floured surface, roll out one disc of dough to approximately 1/4-inch thickness. Keep the other disc chilled until ready to use.
