Ingredients

  • 3 cups all-purpose flour
  • 8 ounces unsalted butter (cold, diced)
  • 8 ounces cream cheese (softened)
  • 1 teaspoon vanilla extract
  • 1 cup fruit preserves (apricot, raspberry, or your choice)
  • 0.5 cup powdered sugar (for dusting)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, cold unsalted butter, and softened cream cheese. Using a pastry cutter or your hands, blend the ingredients until the mixture forms a soft dough.

Step 2

Add the vanilla extract to the dough and knead gently to combine. Do not overwork the dough.

Step 3

Divide the dough into two equal portions, shape them into discs, and wrap each disc in plastic wrap. Refrigerate for at least 2 hours or until firm.

Step 4

Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper to prepare for baking.

Step 5

On a lightly floured surface, roll out one disc of dough to approximately 1/4-inch thickness. Keep the other disc chilled until ready to use.

Step 6

Using a 2-inch square cookie cutter or knife, cut the dough into squares. Place the squares onto the prepared baking sheets, spacing them slightly apart.

Step 7

Place about a teaspoon of your chosen fruit preserves in the center of each square. Carefully fold two opposite corners of each square over the filling, overlapping slightly, and press gently to seal.

Step 8

Continue this process with the remaining dough, re-rolling scraps as necessary until all the dough is used.

Step 9

Bake the cookies in the preheated oven for 12–15 minutes, or until the edges are just lightly golden. Remove the baking sheets from the oven and allow the cookies to cool on the sheets for 5 minutes.

Step 10

Transfer the cookies to a wire rack to cool completely. Once cooled, dust generously with powdered sugar before serving.
