Ingredients

  • 6 ounces strawberry-flavored gelatin
  • 2 cups boiling water
  • 1 cup cold water
  • 20 ounces crushed pineapple (with juice)
  • 10 ounces frozen strawberries (thawed)
  • 1 cup sour cream
  • 1 cup mini marshmallows
  • 0.5 cup chopped pecans (optional)

Directions

Step 1

In a large mixing bowl, dissolve the strawberry-flavored gelatin in 2 cups of boiling water. Stir for 2-3 minutes to ensure the gelatin is fully dissolved.

Step 2

Add 1 cup of cold water to the bowl and mix well.

Step 3

Stir in the crushed pineapple along with its juice and the thawed frozen strawberries. Mix until all fruit is evenly distributed.

Step 4

Pour half of the gelatin mixture into a 9x13-inch glass dish or a decorative serving bowl. Place this in the refrigerator for about 45 minutes or until the layer is partially set (firm enough to hold the sour cream).

Step 5

Once partially set, spread the sour cream evenly over the gelatin layer using a spatula.

Step 6

Gently pour the remaining gelatin mixture over the sour cream layer. Be careful to avoid disturbing the sour cream layer.

Step 7

Sprinkle the mini marshmallows on top and, if desired, the chopped pecans for added texture and flavor.

Step 8

Refrigerate the dish for at least 4 hours, or until fully set.

Step 9

Serve chilled, and enjoy this delightful, old-fashioned dessert!
