Ingredients

  • 6 oz Strawberry-flavored gelatin mix
  • 2 cups Boiling water
  • 1.5 cups Cold water
  • 20 oz Crushed pineapple (canned, with juice)
  • 2 cups Miniature marshmallows
  • 8 oz Frozen whipped topping (thawed)
  • 8 oz Cream cheese (softened)
  • 2 Bananas (sliced)
  • 0.5 cups Chopped walnuts (optional)

Directions

Step 1

In a large mixing bowl, dissolve the strawberry-flavored gelatin mix in 2 cups of boiling water. Stir until fully dissolved.

Step 2

Add 1.5 cups of cold water to the gelatin mixture and stir to combine.

Step 3

Stir in the crushed pineapple along with its juice and the miniature marshmallows. Mix well.

Step 4

Pour the mixture into a 9x13-inch baking dish or serving dish and refrigerate for about 90 minutes, or until partially set (it should be wobbly but not fully firm).

Step 5

While the gelatin is setting, in a medium mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Step 6

Fold the thawed whipped topping into the cream cheese until well combined and fluffy. Set aside.

Step 7

Once the gelatin has partially set, gently stir in the sliced bananas and chopped walnuts (if using) to distribute them evenly.

Step 8

Spread the cream cheese and whipped topping mixture evenly over the partially set gelatin mixture, creating a smooth layer.

Step 9

Refrigerate the entire dish for at least 2 more hours, or until fully set.

Step 10

Slice into squares or scoop out servings with a large spoon and enjoy!
