Ingredients

  • 2.5 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 1 cup Honey
  • 0.75 cup Brown sugar
  • 0.5 cup Vegetable oil
  • 1 cup Non-dairy milk (such as almond, soy, or oat milk)
  • 3 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Strong brewed tea (cooled)
  • 0.5 cup Chopped nuts (optional, such as walnuts or almonds)
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan, or line it with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and salt. Set aside.

Step 3

In another large bowl, whisk together the honey, brown sugar, and vegetable oil until smooth.

Step 4

Add the non-dairy milk, eggs, vanilla extract, and brewed tea to the honey mixture. Whisk until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula or whisk. Be careful not to overmix; stir until just combined.

Step 6

If using, fold in the chopped nuts and raisins.

Step 7

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Slice and serve as is, or dust lightly with powdered sugar for a decorative touch. Enjoy!
