Ingredients

  • 4 cups Old-fashioned rolled oats
  • 1 cup Raw almonds
  • 1 cup Raw pecans
  • 1 cup Unsweetened shredded coconut
  • 1 cup Pumpkin seeds (pepitas)
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Maple syrup
  • 0.25 cup Honey
  • 0.5 cup Coconut oil (melted)
  • 2 teaspoons Vanilla extract
  • 1 cup Dried cranberries (optional)
  • 0.5 cup Dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, pecans, shredded coconut, pumpkin seeds, ground cinnamon, and salt. Stir until evenly mixed.

Step 3

In a small saucepan over low heat, warm the maple syrup, honey, and coconut oil until they are fully combined. Remove from heat and stir in the vanilla extract.

Step 4

Pour the wet mixture over the dry ingredients and mix well, ensuring every ingredient is evenly coated.

Step 5

Spread the granola mixture onto the prepared baking sheet in an even layer. Use a spatula to press down lightly for a clumpier texture.

Step 6

Bake in the preheated oven for 30 minutes, stirring halfway through to ensure even browning. Watch closely during the last few minutes to prevent burning.

Step 7

Remove the granola from the oven and let it cool completely on the baking sheet. It will crisp up as it cools.

Step 8

Once cooled, mix in any dried cranberries or dark chocolate chips, if desired.

Step 9

Transfer the granola to an airtight container or jar for storage. It will stay fresh at room temperature for up to 2 weeks.
