Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 12 oz egg noodles
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the egg noodles according to package directions until al dente. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened.

Step 4

Add the ground beef to the skillet and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Stir in the minced garlic and cook for 1 more minute.

Step 5

Season the beef mixture with salt and black pepper. Remove from heat and drain any excess grease.

Step 6

In a large mixing bowl, combine the cooked egg noodles, ground beef mixture, cream of mushroom soup, sour cream, frozen mixed vegetables, and 1 cup of shredded cheddar cheese. Stir until well-mixed.

Step 7

Grease a 9x13-inch casserole dish. Transfer the mixture into the dish and spread it out evenly.

Step 8

Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.

Step 9

Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbling.

Step 10

Remove the casserole from the oven and let it cool for 5 minutes. Garnish with chopped parsley, if desired, before serving.

Step 11

Serve warm and enjoy this comforting classic with your family!
