Rinse the fresh grapes thoroughly under cold water and remove any stems. Discard any bruised or damaged grapes.
Place the grapes in a large pot and crush them with a potato masher to release their juice.
Add 1/2 cup of water to the pot and bring the mixture to a boil over medium heat. Reduce the heat and let it simmer for about 10 minutes, stirring occasionally.
Pour the cooked grape mixture through a fine-mesh sieve or cheesecloth into a large bowl, pressing out as much juice as possible. Discard the solids.
Measure 4 cups of grape juice and pour it into a clean pot. If you have less than 4 cups, add a bit of water to reach the full amount.
In a small bowl, mix the powdered fruit pectin with 1/4 cup of the sugar. Add this mixture to the grape juice and stir well to combine.
Heat the grape juice mixture over medium-high heat, stirring constantly until it comes to a full rolling boil that cannot be stirred down.
Quickly stir in the remaining 3 1/4 cups of sugar. Return the mixture to a full rolling boil, stirring constantly, and boil for exactly 1 minute.
Remove the pot from heat and skim off any foam from the surface with a spoon.
Ladle the hot jelly into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars clean with a damp cloth.
Seal the jars with sterilized lids and screw bands until finger-tight.
Process the jars in a boiling water bath for 10 minutes to ensure proper sealing.
Remove the jars from the water bath and let them cool completely at room temperature. Check that the lids have sealed properly by pressing down on the center – it should not pop back.
Store sealed jars in a cool, dark place for up to 1 year. Once opened, refrigerate and consume within 1 month.
