Ingredients

  • 0.75 cups Unsalted butter
  • 1 cups Granulated sugar
  • 0.25 cups Molasses
  • 1 Large egg
  • 2.25 cups All-purpose flour
  • 2 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 1 teaspoons Ground ginger
  • 0.5 teaspoons Ground cloves
  • 0.25 teaspoons Salt
  • 0.5 cups Granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the molasses and the egg to the butter-sugar mixture, and beat until fully combined.

Step 4

In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms. Do not overmix.

Step 6

Scoop tablespoon-sized portions of the dough and roll them into balls. Roll each ball in the extra granulated sugar to coat them completely.

Step 7

Place the sugar-coated dough balls about 2 inches apart on the prepared baking sheets.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the cookies are set around the edges and have a slight crackle on top.

Step 9

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cooled cookies in an airtight container at room temperature for up to 1 week.
