Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 stalks celery stalks, diced
  • 3 medium russet potatoes, peeled and diced
  • 3 cloves garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 4 cups fish stock or clam juice
  • 1 cup heavy cream
  • 1.5 pounds fresh cod or haddock fillets, cut into bite-sized pieces
  • 1 bay leaf
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 4 slices bacon, chopped and cooked until crispy (optional)

Directions

Step 1

In a large, heavy-bottomed pot, melt the butter over medium heat.

Step 2

Add the diced onion and celery to the pot and sauté for 5-7 minutes, or until softened and fragrant.

Step 3

Stir in the garlic and cook for an additional 1 minute.

Step 4

Sprinkle the flour over the vegetables and stir well, cooking for 2 minutes to remove the raw flour taste.

Step 5

Gradually pour in the fish stock or clam juice while whisking constantly to prevent lumps from forming.

Step 6

Add the diced potatoes and bay leaf to the pot. Bring the mixture to a gentle boil, then reduce the heat to a simmer.

Step 7

Cook the potatoes for 15-20 minutes, or until they are tender when pierced with a fork.

Step 8

Stir in the heavy cream, chopped dill, salt, and pepper.

Step 9

Add the fish pieces to the pot and gently simmer for 5-7 minutes, or until the fish is opaque and cooked through. Do not overcook.

Step 10

Remove the bay leaf, and adjust seasoning with additional salt and pepper if needed.

Step 11

Ladle the chowder into bowls and top with crispy chopped bacon, if desired. Serve warm with crusty bread and enjoy!
