Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 medium (finely diced) Yellow onion
  • 2 cloves (minced) Garlic
  • 3 tablespoons All-purpose flour
  • 2.5 cups Whole milk
  • 0.5 cup Heavy cream
  • 2 cups (shredded) Sharp cheddar cheese
  • 0.5 cup (grated) Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Paprika
  • 1 teaspoon Fresh thyme leaves
  • 0.5 cup Panko bread crumbs (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or non-stick spray.

Step 2

Peel the potatoes and slice them thinly into 1/8-inch rounds using a sharp knife or mandoline slicer. Set the sliced potatoes aside in a large bowl of cold water to prevent browning.

Step 3

In a medium saucepan over medium heat, melt the butter. Add the diced onion and cook until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Sprinkle the flour over the onion mixture and whisk constantly for 1-2 minutes to form a roux.

Step 5

Gradually pour in the milk and heavy cream, whisking constantly to remove any lumps. Cook until the mixture thickens slightly, about 3-4 minutes.

Step 6

Reduce the heat to low, then stir in the shredded cheddar, grated Parmesan, salt, black pepper, paprika, and thyme. Stir until the cheese is fully melted and the sauce is smooth. Remove from heat.

Step 7

Drain and pat the sliced potatoes dry with a clean kitchen towel. Layer half of the potatoes evenly on the bottom of the prepared baking dish.

Step 8

Pour half of the cheese sauce over the potatoes and spread it evenly. Repeat with the remaining potato slices and cheese sauce to create two layers.

Step 9

If using panko bread crumbs, sprinkle them evenly over the top for added crunch.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

Step 11

Remove the foil and bake uncovered for an additional 25-30 minutes, or until the potatoes are tender and the top is golden and bubbly.

Step 12

Remove from the oven and let the dish rest for 10 minutes before serving. Garnish with additional thyme or parsley if desired.
