Ingredients

  • 2 medium Russet potatoes
  • 1 cup Unsalted butter
  • 1 cup Whole milk
  • 0.5 cup Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Active dry yeast
  • 0.25 cup Warm water
  • 2 Large eggs
  • 6 cups All-purpose flour
  • 2 tablespoons Butter (melted for brushing)

Directions

Step 1

Peel the potatoes and cut them into chunks. Boil in salted water until soft, about 15 minutes. Drain and mash the potatoes until smooth. Measure 1 cup of mashed potatoes and set aside to cool.

Step 2

In a small saucepan, combine the butter and milk. Heat over medium-low heat until the butter melts, then remove from heat. Let cool until lukewarm.

Step 3

In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let sit for 5-10 minutes until foamy.

In a large mixing bowl, combine the mashed potatoes, milk and butter mixture, sugar, salt, eggs, and the yeast mixture. Mix until smooth.
