Ingredients

  • 5 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 medium Yellow onion
  • 2 cloves Garlic cloves
  • 4 cups Chicken or vegetable broth
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Cooked bacon (crumbled)

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Set them aside in a bowl of cold water to prevent browning.

Step 2

Dice the yellow onion and mince the garlic cloves.

Step 3

In a large pot, melt the butter over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and cook for another 30 seconds, stirring often.

Step 4

Drain the potatoes and add them to the pot. Pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 20-25 minutes, or until the potatoes are fork-tender.
