Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 0.5 small Red onion
  • 1 cup Mayonnaise
  • 2 tablespoons Granulated sugar
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Celery seed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by preparing the vegetables. Remove any wilted outer leaves from the cabbage, then cut it in half and remove the core. Thinly slice the cabbage using a sharp knife, mandoline, or food processor. Transfer to a large mixing bowl.

Step 2

Peel the carrots and grate them using the large holes of a box grater or the shredding blade of a food processor. Add the shredded carrots to the bowl with the cabbage.

Step 3

Finely dice the red onion and add it to the bowl with the other vegetables.

Step 4

In a separate small mixing bowl, prepare the dressing. Combine the mayonnaise, granulated sugar, apple cider vinegar, Dijon mustard, celery seed, salt, and black pepper. Whisk until smooth and well combined.

Step 5

Pour the dressing over the cabbage mixture. Toss everything together until the vegetables are evenly coated with the dressing.

Step 6

Cover the bowl with plastic wrap or transfer the coleslaw to an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld before serving.

Step 7

Give the coleslaw a quick toss before serving. Serve chilled and enjoy!
