Ingredients

  • 1.5 cups unsweetened shredded coconut
  • 2 cups whole milk
  • 0.75 cups granulated sugar
  • 3 pieces large eggs
  • 2 tablespoons unsalted butter
  • 1.5 teaspoons vanilla extract
  • 2 tablespoons all-purpose flour
  • 0.25 teaspoons salt
  • 1 9-inch pre-made pie crust

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Place the pre-made pie crust in a 9-inch pie dish and crimp the edges. Set aside.

Step 3

In a medium saucepan, combine the whole milk and shredded coconut. Slowly heat over medium-low heat until just warm, stirring frequently. Do not let it boil.

Step 4

In a mixing bowl, whisk together the granulated sugar, eggs, melted butter, vanilla extract, flour, and salt until smooth and well combined.

Step 5

Gradually add the warmed milk and coconut mixture into the egg mixture, whisking constantly to prevent the eggs from cooking.

Step 6

Pour the custard mixture into the prepared pie crust, spreading it evenly.

Step 7

Place the pie dish on the middle rack of the oven and bake for 45–50 minutes, or until the custard is set and the center is slightly jiggly.

Step 8

Remove the pie from the oven and allow it to cool to room temperature. Once cooled, refrigerate for at least 2 hours to fully set.

Step 9

Serve slices chilled or at room temperature, optionally garnished with whipped cream or a sprinkle of toasted coconut.
