Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 0.5 cup brown sugar (packed)
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 0.5 teaspoon peppermint extract
  • 2.25 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup mint chips or Andes mint baking chips

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats and set aside.

Step 2

In a large mixing bowl, use a hand or stand mixer to cream the butter, granulated sugar, and brown sugar together until the mixture is light and fluffy, about 2-3 minutes.

Step 3

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and peppermint extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.

Step 5

Gradually add the dry ingredients into the wet ingredients, mixing on low speed until everything is just combined. Be careful not to overmix the dough.

Step 6

Gently fold in the semisweet chocolate chips and mint chips until evenly distributed throughout the dough.

Step 7

Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough about 2 inches apart onto the prepared baking sheets.

Step 8

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are set but the centers still look slightly soft.

Step 9

Remove the baking sheets from the oven and allow the cookies to cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the cookies warm, at room temperature, or store them in an airtight container for up to a week. They also freeze well for future enjoyment!
