Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground beef
  • 28 ounces diced tomatoes (with juice)
  • 15 ounces tomato sauce
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional)
  • 1 cup shredded cheddar cheese (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)
  • 2 green onions, sliced (optional, for topping)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the olive oil and let it warm up for about 1 minute.

Step 2

Add the diced onion and sauté for 5 minutes until softened and translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 3

Add the ground beef to the pot, breaking it up with a wooden spoon. Cook it for 7-10 minutes until browned and fully cooked. Drain excess grease if necessary.

Step 4

Stir in the diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth.

Step 5

Add the chili powder, ground cumin, paprika, dried oregano, salt, black pepper, and cayenne pepper (if using). Stir well to combine all the ingredients.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the pot partially with a lid and let it simmer for 60-75 minutes, stirring occasionally to prevent sticking.

Step 7

Taste the chili and adjust the seasoning if needed. If it’s too thick, add a little more beef broth to reach your desired consistency.

Step 8

Serve hot, and if desired, top each bowl with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of sliced green onions.
