Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup light brown sugar
  • 0.25 cup granulated sugar
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 2 cups apples (peeled, cored, and diced)
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper or grease it lightly.

Step 2

In a large mixing bowl, combine the rolled oats, flour, light brown sugar, granulated sugar, cinnamon, nutmeg, baking soda, and salt. Stir until all dry ingredients are evenly distributed.

Step 3

Mix the melted butter, vanilla extract, and honey together in a small bowl. Pour this mixture into the dry ingredients and stir until crumbly.

Step 4

Fold in the diced apples and chopped walnuts (if using) until evenly distributed throughout the mixture.

Step 5

Press the mixture firmly and evenly into the prepared pan, making sure it's compact and level.

Step 6

Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.

Step 7

Remove the pan from the oven and let the bars cool completely in the pan before slicing.

Step 8

Once cooled, slice into 12 bars and enjoy! Store leftovers in an airtight container for up to 5 days.
