Ingredients

  • 250 g All-purpose flour
  • 125 g Unsalted butter
  • 125 g Cream cheese
  • 0.5 tsp Salt
  • 1 large Egg yolk
  • 150 g Grated cheese (cheddar, gouda, or your choice)
  • 0.5 tsp Paprika (optional, for garnish)
  • 1 tbsp Milk or egg wash (for brushing)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt.

Step 2

Cut the unsalted butter into small cubes and add it to the flour mixture.

Step 3

Using a pastry cutter or your fingertips, blend the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Add the cream cheese to the bowl. Work it into the mixture until a soft dough forms. Avoid overworking the dough.

Step 5

Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Step 6

Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.

Step 7

On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch (3 mm).

Step 8

Using a round pastry cutter or glass, cut out circles from the dough (~3 inches in diameter). Gather and re-roll any dough scraps as needed.

Step 9

Place a small mound (about 1 teaspoon) of grated cheese in the center of each dough circle.

Step 10

Fold each circle in half to form a crescent shape, gently pressing the edges together. Use a fork to crimp the edges and seal them.

Step 11

Arrange the pastries on the prepared baking tray, leaving space between each one.

Step 12

Brush the tops of the pastries with milk or egg wash for a golden finish. Optionally, sprinkle with paprika for extra flavor.

Step 13

Bake in the preheated oven for 18-20 minutes, or until the pastries are golden brown and flaky.

Step 14

Remove from the oven and let the pastries cool slightly on a wire rack before serving.
