Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 2 cups Buttermilk
  • 2 pieces Large eggs
  • 4 tablespoons Unsalted butter (melted and cooled)
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Butter or oil for greasing the pan

Directions

Step 1

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Step 2

In another medium bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.

Step 3

Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently with a spatula or wooden spoon until just combined. Avoid overmixing; the batter should have some lumps.

Step 4

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

Step 5

Scoop about 1/4 cup of batter onto the skillet for each pancake. Use the back of the spoon to spread the batter slightly if needed.

Step 6

Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.

Step 7

Flip the pancake carefully with a spatula and cook for another 1-2 minutes on the other side, until golden brown.

Step 8

Transfer the cooked pancakes to a plate and keep warm. Repeat with the remaining batter, greasing the skillet as needed.

Step 9

Serve the pancakes warm with your favorite toppings, such as maple syrup, butter, fresh fruit, or whipped cream.
