Ingredients

  • 3 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 1 cup Unsalted butter
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1.25 cups Buttermilk
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 0.75 cups Light brown sugar
  • 2 teaspoons Ground cinnamon
  • 0.5 cup Pecans (optional, chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper for easier removal.

Step 2

In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, and salt. Mix until well incorporated.

Step 3

Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the buttermilk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and stir until just combined—do not overmix.

Step 5

In a medium bowl, prepare the crumble topping by combining the light brown sugar, ground cinnamon, and optional pecans. Mix it evenly.

Step 6

Pour half of the cake batter into the prepared baking pan and spread it evenly. Sprinkle half of the crumble mixture over the batter.

Step 7

Add the remaining batter on top of the crumble layer and carefully spread it using a spatula. Finish by sprinkling the remaining crumble mixture evenly on top.

Step 8

Bake in the preheated oven for 35–40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and allow it to cool for at least 10 minutes in the pan. Serve warm or at room temperature.
