Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups egg noodles, uncooked
  • 2 (10.5 ounces each) cans of condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.

Step 3

Add the chopped onion and minced garlic to the ground beef in the skillet. Cook for 3-5 minutes, stirring occasionally, until the onion is softened and fragrant.

Step 4

While the meat is cooking, bring a large pot of salted water to a boil. Cook the egg noodles for 6-7 minutes or until just al dente. Drain and set aside.

Step 5

In a large mixing bowl, combine the cream of mushroom soup, sour cream, salt, black pepper, and half of the shredded cheddar cheese. Stir until well blended.

Step 6

Fold the cooked noodles, cooked ground beef-onion mixture, and frozen mixed vegetables into the soup mixture, ensuring everything is evenly coated.

Step 7

Transfer the mixture into a 9x13-inch casserole dish, spreading it out evenly.

Step 8

Sprinkle the remaining shredded cheddar cheese over the top of the casserole.

Step 9

If desired, lightly dust the top with paprika for extra color and flavor.

Step 10

Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 11

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbling.

Step 12

Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy!
