Ingredients

  • 4 lbs beef brisket
  • 2 tbsp olive oil
  • 2 large (sliced) yellow onion
  • 4 whole (peeled and cut into chunks) carrots
  • 3 whole (chopped) celery stalks
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 4 minced garlic cloves
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 tsp (or to taste) salt
  • 1 tsp (or to taste) black pepper
  • 2 tbsp (optional, for thickening sauce) flour
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat.

Step 3

Season the brisket generously with salt and black pepper on both sides.

Step 4

Sear the brisket in the hot oil for about 3-4 minutes per side until well-browned. Remove the brisket and set aside.

Step 5

In the same pot, add the sliced onions, carrots, and celery. Sauté for about 5 minutes until softened and slightly caramelized.

Step 6

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 7

Add the tomato paste to the pot and stir well to coat the vegetables.

Step 8

Pour in the beef broth and water, scraping the bottom of the pot to deglaze and release the flavorful browned bits.

Step 9

Add the thyme and rosemary sprigs to the liquid, then return the seared brisket to the pot, nestling it into the vegetables and broth.

Step 10

Cover the pot with a tight-fitting lid and place it in the preheated oven.

Step 11

Cook the brisket for 4 hours, flipping it halfway through cooking, until the meat is fork-tender and easily pulls apart.

Step 12

If you’d like to thicken the sauce, remove the brisket and vegetables from the pot and set aside. Place the pot over medium heat on the stovetop and whisk in 2 tablespoons of flour. Simmer the sauce, whisking constantly, until thickened.

Step 13

Slice the brisket against the grain and serve with the vegetables and sauce poured on top.
