Ingredients

  • 1 cup Raisins
  • 0.5 cup Water
  • 0.5 cup Unsalted butter
  • 1 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt

Directions

Step 1

In a small saucepan, combine the raisins and water. Bring to a boil over medium heat, then reduce the heat and let simmer for 5 minutes. Remove from heat and allow to cool. Reserve the liquid (it will be used later).

Step 2

In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

Step 3

Beat in the egg and vanilla extract, mixing well.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing well after each addition. Stir in the cooled raisins along with 3 tablespoons of the reserved raisin liquid to create a soft dough.

Step 6

Cover the dough and refrigerate for at least 30 minutes to allow it to firm up.

Step 7

Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or lightly grease them.

Step 8

Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Step 9

Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. The centers should still be soft.

Step 10

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
