Ingredients

  • 2 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter (cold, cubed)
  • 0.75 cups Heavy cream (cold)
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Optional: coarse sugar (for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Step 3

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 5

Pour the wet ingredients into the dry mixture. Stir gently with a wooden spoon or spatula until the dough just comes together. Be careful not to overmix.

Step 6

Lightly flour a clean work surface and turn out the dough. Pat it into a round disc about 1 inch thick and 7 inches in diameter.

Step 7

Using a sharp knife or bench scraper, cut the disc into 8 equal wedges.

Step 8

Transfer the wedges to the prepared baking sheet, leaving some space between each piece.

Step 9

If desired, brush the tops of the scones with a little heavy cream and sprinkle with coarse sugar for a golden, crunchy finish.

Step 10

Bake the scones in the preheated oven for 14-16 minutes, or until the tops are lightly golden.

Step 11

Remove from the oven and allow the scones to cool slightly on the baking sheet before transferring them to a wire rack.

Step 12

Serve warm or at room temperature with your favorite accompaniments such as butter, jam, or clotted cream. Enjoy!
