  • 1 large Russet potato, peeled and cubed
  • 1 head Green cabbage, chopped
  • 8 cups Beef broth
  • 14.5 ounces Diced tomatoes (canned)
  • 2 tablespoons Tomato paste
  • 1 whole Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Vegetable oil
  • 1 cup Water (optional, for thinner soup)

Directions

Step 1

In a large pot or Dutch oven, heat the vegetable oil over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it into smaller pieces with a wooden spoon. Drain any excess fat and set aside.

In the same pot, add the diced onion, carrots, and celery. Sauté for 5 minutes, or until the vegetables become tender.
