Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 3 cups sharp cheddar cheese, shredded
  • 1.5 cups mozzarella cheese, shredded
  • 0.5 cup parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 cup breadcrumbs
  • 2 tbsp olive oil or melted butter (for breadcrumbs)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to make a roux.

Step 4

Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Cook and stir until the mixture thickens, about 5-7 minutes.

Step 5

Add the shredded cheddar, mozzarella, and parmesan cheeses to the sauce, reserving 1/2 cup of cheddar for the topping. Stir until the cheese is melted and the sauce is smooth.

Step 6

Season the cheese sauce with salt, black pepper, and paprika. Taste and adjust seasoning as needed.

Step 7

Add the cooked macaroni to the cheese sauce and stir until well coated.

Step 8

Pour the macaroni and cheese mixture into the prepared baking dish and spread it out evenly.

Step 9

In a small bowl, combine the breadcrumbs with olive oil or melted butter. Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.

Step 10

Top with the reserved cheddar cheese for an extra cheesy finish.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbling.

Step 12

Remove from the oven and let it sit for 5 minutes before serving. Enjoy Grandma's Baked Macaroni and Cheese!
