Ingredients

  • 6 pounds apples
  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoons ground cloves
  • 0.5 teaspoons salt
  • 2 teaspoons vanilla extract
  • 1 cup water

Directions

Step 1

Peel, core, and chop the apples into small chunks, discarding the cores and peels.

Step 2

Add the chopped apples to a large slow cooker. Pour in the water and stir to evenly distribute.

Step 3

In a medium bowl, mix together the granulated sugar, brown sugar, cinnamon, nutmeg, cloves, and salt.

Step 4

Pour the sugar and spice mixture over the apples in the slow cooker, and gently toss to coat the apples evenly.

Step 5

Cover the slow cooker and cook on low heat for 10 hours. Stir the mixture every 2-3 hours to prevent sticking and to ensure even cooking.

Step 6

After 10 hours, the apples should be soft, caramelized, and fragrant. Use an immersion blender to puree the apple mixture until smooth. For chunkier apple butter, skip this step or blend only partially.

Step 7

Stir in the vanilla extract and taste for sweetness or spice, adjusting if needed.

Step 8

Transfer the apple butter to sterilized jars while still warm, leaving about 1/4 inch of headspace at the top of each jar.

Step 9

Allow the jars to cool completely before storing them in the refrigerator for up to 3 weeks. For long-term storage, process the jars in a boiling water canner following safe canning practices.
