Ingredients

  • 250 grams all-purpose flour
  • 120 grams ground almonds (almond flour)
  • 200 grams unsalted butter, softened
  • 200 grams granulated sugar
  • 4 pieces eggs, large
  • 10 grams baking powder
  • 100 milliliters milk
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 50 grams sliced almonds
  • 10 grams powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch (23cm) springform pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, ground almonds, and baking powder. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and sugar together using an electric mixer until light and fluffy, about 3-4 minutes.

Step 4

Add eggs one at a time to the butter-sugar mixture, beating well after each addition. Stir in the vanilla extract and lemon zest.

Step 5

Gradually mix the dry ingredients into the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined.

Step 6

Pour the batter into the prepared springform pan and spread it evenly. Sprinkle the top with sliced almonds.

Step 7

Bake the cake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Step 8

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully release it from the pan and let it cool completely on a wire rack.

Step 9

Once the cake is cool, dust the top with powdered sugar before serving.

Step 10

Slice and enjoy Grandma's Almond Cake with your favorite cup of coffee or tea!
