Ingredients

  • 6 pieces Large eggs
  • 3 tablespoons Plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Apple cider vinegar
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 teaspoons Paprika
  • 1 tablespoon Fresh chives (optional, for garnish)

Directions

Step 1

Place the eggs in a single layer in a saucepan and cover them with cold water, about 1 inch above the eggs.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan and remove it from heat. Let the eggs sit in the hot water for 10 minutes to fully cook.

Step 3

Transfer the eggs to a bowl of ice water and let them cool for at least 5 minutes. This will make peeling easier.

Step 4

Peel the eggs under cold running water and cut each egg in half lengthwise.

Step 5

Gently scoop out the yolks and place them into a medium bowl. Set the egg whites aside on a serving platter.

Step 6

Mash the yolks with a fork until they are crumbly and fine.

Step 7

Add the Greek yogurt, Dijon mustard, apple cider vinegar, salt, and black pepper to the mashed yolks. Mix until smooth and creamy. Taste and adjust seasoning if necessary.

Step 8

Using a spoon or a piping bag, carefully fill each egg white half with the yolk mixture.

Step 9

Sprinkle the tops with paprika and garnish with chopped chives, if using.

Step 10

Serve immediately or refrigerate for up to 4 hours before serving. Enjoy!
