Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons salt
  • 125 grams unsalted butter, softened
  • 200 grams granulated sugar
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 120 milliliters whole milk
  • 2 medium apples, peeled, cored, and thinly sliced
  • 2 tablespoons demerara sugar
  • 1 tablespoon powdered sugar, for dusting

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.

Step 2

In a medium mixing bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

Step 3

In a large bowl, using an electric mixer, cream the softened butter and sugar together until light and fluffy, about 2 minutes.

Step 4

Beat in the eggs, one at a time, ensuring they are fully incorporated. Add the vanilla extract and mix briefly.

Step 5

Reduce the mixer speed to low and alternately add the flour mixture and milk to the wet ingredients, beginning and ending with the flour. Mix until just combined, being careful not to overmix.

Step 6

Fold the thinly sliced apples gently into the batter using a spatula.

Step 7

Pour the batter into the prepared cake pan and spread it out evenly. Sprinkle the top with demerara sugar for a crunchy finish.

Step 8

Bake the cake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 10

Once cooled, dust the top of the cake with powdered sugar before slicing and serving.
