Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 0.25 cup water
  • 1 head iceberg lettuce
  • 2 cups cheddar cheese, shredded
  • 3 pieces roma tomatoes, diced
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 4 stalks green onions, chopped
  • 2 cups tortilla chips, crushed
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 0.5 cup ranch dressing
  • 1 piece avocado, diced (optional)
  • 0.25 cup fresh cilantro, chopped (optional garnish)

Directions

Step 1

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 7-10 minutes. Drain any excess fat.

Step 2

Stir in the taco seasoning and water into the cooked beef. Mix well and simmer for 2-3 minutes until the seasoning is fully absorbed. Remove from heat and let cool slightly.

Step 3

While the beef is cooling, chop the iceberg lettuce into bite-sized pieces and place it in a large salad bowl.

Step 4

Layer the salad ingredients over the lettuce: add the shredded cheddar cheese, diced tomatoes, rinsed black beans, corn, and chopped green onions.

Step 5

In a small bowl, combine the sour cream, salsa, and ranch dressing. Mix until smooth and set aside for the dressing.

Step 6

Add the slightly cooled taco-seasoned beef to the salad bowl, followed by the crushed tortilla chips.

Step 7

Drizzle the prepared dressing over the salad and gently toss all the ingredients until evenly coated.

Step 8

Top the salad with diced avocado and a sprinkle of chopped fresh cilantro for garnish, if desired.

Step 9

Serve immediately and enjoy!
