  • 12 pieces butter lettuce leaves
  • 1 tbsp vegetable oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 medium carrot, shredded
  • 1 can (8 oz) water chestnuts, diced
  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha (optional)
  • 2 stalks green onions, thinly sliced
  • 1 tsp sesame oil
  • 2 tbsp crushed peanuts (for garnish)

Directions

Step 1

Rinse the butter lettuce leaves and pat them dry with a clean towel. Set aside.

Step 2

In a large skillet, heat the vegetable oil over medium-high heat.

Step 3

Add the finely diced onion and sauté for 2-3 minutes, until translucent.

Step 4

Stir in the minced garlic and grated ginger. Cook for another 1 minute until fragrant.

Step 5

Add the ground chicken to the skillet. Cook for 5-7 minutes, breaking it apart with a wooden spoon, until fully browned.

Step 6

Stir in the shredded carrot and diced water chestnuts. Cook for another 2-3 minutes.
