Ingredients

  • 6 oz (two 3-oz boxes) Raspberry-flavored gelatin (Jello)
  • 2 cups Boiling water
  • 1 cup Cold water
  • 8 oz (1 can) Crushed pineapple (with juice)
  • 1 cup Fresh or frozen raspberries
  • 1 cup Sour cream
  • 1 cup Mini marshmallows

Directions

Step 1

In a large mixing bowl, dissolve the raspberry-flavored gelatin in 2 cups of boiling water. Stir well until completely dissolved, about 2 minutes.

Step 2

Add 1 cup of cold water to the bowl and mix thoroughly.

Step 3

Stir in the crushed pineapple along with its juice and 1 cup of fresh or frozen raspberries. Mix gently to combine.

Step 4

Pour half of the gelatin mixture into a 9-cup capacity mold or bundt pan. Place it in the refrigerator and chill for about 30-45 minutes or until the layer is partially set but still slightly tacky.

In a separate bowl, mix 1 cup of sour cream and 1 cup of mini marshmallows. Spread this creamy mixture gently over the partially set gelatin layer in the mold.
