  • 8 cups vegetable broth
  • 2 bay leaves
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large stockpot over medium heat.

Add the diced onion and cook for 3-4 minutes until translucent.

Stir in the minced garlic and cook for 30 seconds until fragrant.

Add the sliced carrots and celery to the pot. Cook for 5 minutes, stirring occasionally.
