Ingredients

  • 1 pound beef sirloin
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 2 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces white button mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons sour cream
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 12 ounces egg noodles or mashed potatoes (for serving)

Directions

Step 1

Slice the beef sirloin into thin strips, about 2 inches long. Season with salt, black pepper, and paprika, then dust lightly with the all-purpose flour.

Step 2

Heat 2 tablespoons of butter and the olive oil in a large skillet over medium-high heat. Sear the beef strips in batches until browned on all sides, about 1-2 minutes per batch. Transfer the seared beef to a plate and set aside.

Step 3

Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Add the chopped onion and sauté for 3-4 minutes, until softened. Stir in the minced garlic and cook for another 30 seconds, until fragrant.

Step 4

Add the sliced mushrooms to the skillet and cook for 5-6 minutes, stirring occasionally, until they release their moisture and start to brown.

Step 5

Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a gentle simmer, then reduce the heat to low.

Step 6

Stir in the sour cream until fully incorporated, creating a creamy sauce. Return the seared beef to the skillet along with any juices that accumulated on the plate. Simmer for 5-7 minutes, until the beef is tender and heated through.

Step 7

Taste and adjust seasoning with additional salt and pepper, if needed. Remove from heat and garnish with freshly chopped parsley, if desired.

Step 8

Serve hot over cooked egg noodles or mashed potatoes. Enjoy!
