Ingredients

  • 2 cans canned tuna (packed in water)
  • 3 cups fresh spinach
  • 3 large eggs
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 1 medium yellow onion
  • 2 cloves garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon dried parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a standard loaf pan or line it with parchment paper.

Step 2

Drain the canned tuna thoroughly and flake it into a large mixing bowl.

Step 3

Wash the fresh spinach and roughly chop it. Heat 1 tablespoon of olive oil in a skillet over medium heat, then sauté the spinach for 2-3 minutes until wilted. Set aside to cool slightly.

Step 4

Finely dice the yellow onion and mince the garlic cloves. Add them to the mixing bowl with the tuna.

Step 5

In a separate bowl, whisk the eggs, then stir in the milk, salt, black pepper, and dried parsley.

Step 6

Add the sautéed spinach, breadcrumbs, Parmesan cheese, and the whisked egg mixture to the tuna mixture. Stir everything together until well combined.

Step 7

Transfer the mixture into the prepared loaf pan, spreading it out evenly and pressing it gently to compact the loaf.

Step 8

Bake the loaf in the preheated oven for 40-45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.

Step 9

Let the loaf rest for 10 minutes in the pan before gently removing it. Slice and serve warm, or store in the refrigerator for up to 3 days.
