Ingredients

  • 1 pound Fresh dandelion greens
  • 4 slices Smoked bacon
  • 1 medium Yellow onion
  • 3 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Water
  • 0.25 teaspoon Optional: red pepper flakes

Directions

Step 1

Thoroughly wash the dandelion greens to remove any grit or dirt. Trim the tough stems and chop the leaves into bite-sized pieces. Set aside.

Step 2

Chop the smoked bacon into small pieces. Dice the onion and mince the garlic cloves.

Step 3

Heat a large skillet over medium heat. Add the chopped bacon and cook until it is crispy, about 5-7 minutes. Remove the bacon pieces from the skillet and set aside, leaving the rendered fat in the pan.

Step 4

Add olive oil to the skillet if needed, then add the diced onion. Sauté for 3-4 minutes until softened and translucent.

Step 5

Add the minced garlic to the skillet and cook for an additional 30 seconds until fragrant, stirring constantly to prevent burning.

Step 6

Add the chopped dandelion greens to the skillet in batches if necessary, allowing them to wilt down. Stir well to coat the greens in the bacon fat and aromatics.

Step 7

Pour in the apple cider vinegar and water. Sprinkle with salt, black pepper, and optional red pepper flakes. Stir to combine.

Step 8

Cover the skillet with a lid and allow the greens to simmer on low heat for 10-12 minutes, stirring occasionally, until tender and the liquid has mostly evaporated.

Step 9

Return the crispy bacon pieces to the skillet and mix them into the greens. Adjust seasoning with additional salt or pepper if needed.

Step 10

Serve warm as a side dish or pair with crusty bread for a light and rustic meal.
