Ingredients

  • 1 pound calf liver
  • 2 cups milk
  • 2 large yellow onions
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the calf liver slices under cold water and place them in a shallow bowl. Pour 2 cups of milk over the liver to soak and remove any bitter taste. Let it sit for 30 minutes while you prepare the other ingredients.

Step 2

Peel and slice the yellow onions into thin rings. Set aside.

Step 3

In a shallow dish, combine the flour, salt, black pepper, and garlic powder. Mix well.

Step 4

Remove the liver from the milk and pat dry with paper towels. Dredge each slice in the seasoned flour mixture, making sure to coat both sides evenly. Shake off any excess flour.

Step 5

In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized (about 15 minutes). Remove the onions from the skillet and set aside.

Step 6

In the same skillet, add the remaining butter and olive oil. Heat over medium heat until sizzling.

Step 7

Place the floured liver slices in the skillet, being careful not to overcrowd the pan. Cook for 2-3 minutes per side, or until the liver is browned on the outside but still slightly pink in the center. Overcooking will make the liver tough.

Step 8

Return the caramelized onions to the skillet, placing them on top of and around the liver. Cook together for an additional 2 minutes to meld the flavors.

Step 9

Remove the skillet from the heat and transfer the liver and onions to a serving platter. Sprinkle with freshly chopped parsley, if desired, for a pop of color and freshness.

Step 10

Serve warm with mashed potatoes, steamed vegetables, or crusty bread on the side for a complete and hearty meal.
