Place the pork shoulder and the peeled, halved onion in a large pot. Add the water and bring to a boil over medium-high heat.
Reduce the heat to low, cover, and simmer for 2 hours or until the pork is tender and falling apart.
Remove the pork and onion from the pot, and set them aside to cool slightly. Strain the cooking liquid and measure out 4 cups, discarding the rest.
Shred the cooled pork finely using two forks or your hands. Discard any bones and excess fat.
In a large pot, bring the reserved 4 cups of pork cooking liquid to a boil on medium heat. Gradually add the cornmeal in a slow stream, whisking constantly to prevent lumps.
Lower the heat to medium-low and stir in the shredded pork, salt, black pepper, sage, thyme, and nutmeg. Continue stirring until the mixture becomes thick and smooth, about 10-15 minutes.
