In a large skillet or wok, cook the ground pork over medium heat, breaking it into small pieces with a wooden spoon, until no longer pink. Drain any excess fat.
Add the shredded cabbage, carrot, green onions, and minced garlic to the skillet. Stir and cook for 3-4 minutes until the vegetables soften slightly.
Season the mixture with soy sauce, oyster sauce, sesame oil, salt, and black pepper. Stir well to combine and cook for another 2-3 minutes. Remove from heat and let the filling cool to room temperature.
Lay an egg roll wrapper on a clean surface with one corner facing you (so it looks like a diamond). Place about 2 tablespoons of the filling near the corner closest to you.
Fold the bottom corner of the wrapper over the filling, then fold in the left and right corners to enclose the filling. Continue rolling tightly towards the top corner. Brush a little of the beaten egg on the final corner to seal the roll. Repeat with the remaining wrappers and filling.
