  • 4 large Eggs
  • 4 Corn tortillas
  • 1 cup Refried beans
  • 2 tablespoons, chopped Fresh cilantro
  • 0.25 cup Crumbled queso fresco or feta cheese
  • 1 sliced Avocado
  • 2 teaspoons (optional) Hot sauce

Directions

Step 1

Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the diced onion and sauté for 3-4 minutes, until softened and translucent.
