Ingredients

  • 1 pre-made or homemade crust pie crust
  • 4 medium (about 2 pounds) ripe tomatoes
  • 1 teaspoon kosher salt
  • 1 cup mayonnaise
  • 1 cup (shredded) sharp cheddar cheese
  • 0.5 cup (grated) Parmesan cheese
  • 0.25 cup (chopped) fresh basil
  • 2 stalks (sliced thin) green onions
  • 0.5 teaspoon black pepper
  • 1 teaspoon olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Prepare the pie crust and blind bake it: Roll out the crust into a 9-inch pie dish, pressing it into the corners, and trim the edges. Cover the crust with parchment paper and fill with pie weights or dried beans. Bake for 10 minutes, remove the weights, and bake for another 5 minutes. Set aside to cool.

Step 3

Slice the tomatoes into 1/4-inch thick rounds. Lay them out on a baking sheet lined with paper towels and sprinkle them with the kosher salt. Let them sit for 10 minutes to draw out excess moisture. Pat them dry with additional paper towels to prevent a soggy pie.

Step 4

In a medium bowl, mix together the mayonnaise, sharp cheddar cheese, and Parmesan cheese until well combined. Set aside.

Step 5

Layer the pie: Start with a layer of tomatoes on the bottom of the cooled crust, slightly overlapping the slices. Sprinkle half of the chopped basil and sliced green onions over the tomatoes. Repeat with another layer of tomatoes and the remaining basil and green onions.

Step 6

Spread the mayonnaise and cheese mixture evenly over the top layer of tomatoes, ensuring the entire pie is covered.

Step 7

Drizzle the top lightly with olive oil and sprinkle with black pepper for added flavor.

Step 8

Bake the pie in the preheated oven for 30-35 minutes, or until the cheese topping is golden and bubbly.

Step 9

Let the pie cool for at least 10 minutes before slicing. Serve warm or at room temperature.
