Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
In a large mixing bowl, combine the pumpkin puree, maple syrup, melted coconut oil, egg, and vanilla extract. Whisk until smooth.
In a separate bowl, whisk together the oat flour, rolled oats, pumpkin pie spice, baking powder, baking soda, and salt.
