Ingredients

  • 3 large ripe bananas
  • 115 grams unsalted butter
  • 150 grams granulated sugar
  • 50 grams brown sugar
  • 2 whole large eggs
  • 1 teaspoon vanilla extract
  • 240 grams all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 60 grams plain yogurt or sour cream
  • 100 grams chopped nuts or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a standard 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.

Step 3

Melt the unsalted butter and let it cool slightly. Add it to the mashed bananas, along with the granulated sugar and brown sugar. Stir until combined.

Step 4

Beat in the eggs one at a time, followed by the vanilla extract, until the mixture is smooth.

Step 5

In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.

Step 6

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.

Step 7

Fold in the plain yogurt or sour cream to create a moist batter. If using chopped nuts or chocolate chips, fold them in at this stage.

Step 8

Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Step 9

Bake in the preheated oven for 55–65 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
