Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 1 cup Fresh raspberries
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 12 ounces Spaghetti
  • 2 tablespoons Fresh basil, chopped

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest.

Step 3

Add the remaining 1 tablespoon of olive oil to the skillet. Sauté the minced garlic for 1 minute until fragrant, stirring frequently to avoid burning.

Step 4

Add fresh raspberries, balsamic vinegar, honey, and chicken broth to the skillet. Stir gently and simmer for 5 minutes, allowing the raspberries to break down and create a sauce.

Step 5

Reduce the heat to medium-low and stir in the heavy cream. Cook for 2-3 minutes, allowing the sauce to thicken slightly. Add grated Parmesan cheese and stir until melted and combined.

Step 6

Meanwhile, bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

Step 7

Slice the cooked chicken breasts into thin strips. Add the chicken and the cooked spaghetti to the skillet with the raspberry cream sauce. Toss gently to coat the pasta and chicken with the sauce.

Step 8

Garnish with fresh basil and serve hot. Optionally, sprinkle extra Parmesan cheese on top for added flavor.
