Ingredients

  • 2 pieces Chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 3 cups Green cabbage
  • 2 cups Red cabbage
  • 2 medium-sized, shredded Carrots
  • 3 stalks Green onions (scallions)
  • 0.5 cup Slivered almonds
  • 1 cup Crispy chow mein noodles
  • 2 tablespoons Soy sauce
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Sesame oil
  • 1 tablespoon Honey
  • 2 cloves, minced Garlic
  • 1 teaspoon, freshly grated Ginger
  • 1 teaspoon Sesame seeds

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat olive oil in a skillet over medium heat. Place the chicken in the skillet and cook for 6-7 minutes on each side until fully cooked through. Let the chicken cool before shredding or slicing it into thin strips.

Step 3

In a large mixing bowl, combine the green cabbage, red cabbage, shredded carrots, and chopped green onions.

Step 4

In a small dry pan, lightly toast the slivered almonds over low heat until golden brown, about 2-3 minutes. Set aside.

Step 5

Prepare the dressing by whisking together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and sesame seeds in a small bowl.

Step 6

Add the shredded chicken to the vegetable mixture and toss to combine. Drizzle the dressing over the salad and mix well to ensure everything is evenly coated.

Step 7

Top the salad with toasted almonds and crispy chow mein noodles for added crunch.

Step 8

Serve immediately and enjoy this vibrant, fresh Chinese Chicken Salad!
