Ingredients

  • 1 pound breakfast sausage
  • 10 eggs
  • 1.5 cups milk
  • 2 cups shredded cheddar cheese
  • 3 cups cooked and diced potatoes (or frozen hash browns)
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 tablespoon butter or nonstick spray (for greasing pan)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Grease a 9x13-inch baking dish with butter or nonstick spray.

Step 3

In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until browned and fully cooked. Remove it from the skillet and set aside.

Step 4

In the same skillet, sauté the diced bell peppers and onion until softened, about 5 minutes. Remove from heat.

Step 5

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.

Step 6

Add the cooked sausage, sautéed vegetables, cooked potatoes (or hash browns), and 1 1/2 cups of the shredded cheese to the egg mixture. Stir well to combine.

Step 7

Pour the mixture evenly into the prepared baking dish.

Step 8

Sprinkle the remaining 1/2 cup of cheese over the top of the casserole.

Step 9

Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the eggs are set and the top is golden brown.

Step 10

Remove from the oven and let the casserole cool slightly before slicing into portions.

Step 11

Serve warm and enjoy your hearty Governor's Breakfast Casserole!
